Chicken Liver Pate… was not something that I imagined making it at home… Again… This is from Jim Lahey’s second book My Pizza… (There is a mistake on the portion of the chicken liver… the Book says 4 ounce when it should be 16 ounce=1 Pound…)

For the amount of pate we get at the end… the price for the ingredients is amazing… at leaset around the HOME… IGA sells the container of the chicken liver for 4$… Only thing we changed from the recipe was that we added the half of the carrot… 


  • 1-2 tablespoon of extra-virgin olive oil
  • 1 cup Diced onion
  • 1/2 cup Chopped Shallots ( We used 1+1/2 cup of onions )
  • 1/2 cup chopped celery
  • bay leaf
  • 1/3 cup diced apple
  • 15g (1/4) lemon, seeded and diced
  • 1+1/2 tablespoons capers
  • 10g(1+1/2 sillets) anchovies
  • 1 Pound of chicken livers, rinsed and patted dry
  • 1/3 cup sweet wine (Riesling or Marsala)
  • 6-8 slices of bread, toasted
  • garlic clove, peeled and pressed
  • Salt and pepper

Tools: Food Processor (Blender), large pan, Mason Jar (Any Storage Container)

We made some chicken liver toast with the homemade bread… you can freeze them if you want to store them away… in the fridge… it would last about a week… (it’s a cooked meat… ) oh… It is really yummy… it would be an amazing party food…
